亲水胶体复配比例对莜麦面包品质与消化特性的影响

中文摘要: 为开发适用于超重人群的莜麦面包,解决莜麦原料不含面筋蛋白的技术难题,通过优化亲水胶体复配比例改善面包的品质与消化特性。通过单因素试验与响应面设计方法优化亲水胶体(魔芋胶、沙蒿籽胶、海藻酸钠)复配比例。结果显示,最佳亲水胶体复配比例为魔芋胶添加量0.72%、沙蒿籽胶添加量0.98%、海藻酸钠添加量0.51%,此条件下莜麦面包比容4.78 mL/g、水分含量29.45%、感官评分91.76、弹性0.89、硬度324.67 g、咀嚼性286.46 g。体外消化试验显示,莜麦面包的估计血糖生成指数约为56,亲水胶体的添加可以降低莜麦面包的水解指数与估计血糖生成指数。

Abstract:To develop oat bread that caters to overweight individuals and solve the technical problem of oat raw materials not containing gluten protein, the quality and digestive characteristics of bread were improved by optimizing the proportion of hydrophilic colloids. The compound ratio of hydrophilic colloids (konjac gum, artemisia seed gum, and sodium alginate) was optimized through single factor experiments and response surface design methods. The results showed that the optimal ratio of hydrophilic colloids was 0.72% konjac gum,0.98% artemisia seed gum, and 0.51% sodium alginate. Under these conditions, the specific volume of oat bread was 4.78 mL/g; the moisture content was 29.45%, the sensory score was 91.76, the elasticity was 0.89,the hardness was 324.67 g, and the chewiness was 286.46 g. In vitro digestion tests showed that the expected glycemic index of oat bread was about 56, and the addition of hydrophilic colloids could reduce the hydrolysis index and expected glycemic index of oat bread.
