中文摘要: 为考察嗜根考克氏菌(Kocuria rhizophila)AP1和小牛动物球菌(Mammaliicoccus vitulinus)AP2作为发酵香肠专用菌剂的潜力,该研究将AP1和AP2分别接种于发酵香肠,以自然发酵为空白对照,分析香肠发酵过程中活菌数、pH值、色泽和肌原纤维蛋白降解程度等理化特性的变化。结果表明,发酵1 d时,AP1组和AP2组发酵香肠的pH值显著降低至最低值5.86和5.83;发酵结束后,AP1组和AP2组发酵香肠的水分含量降低至10.94%和9.82%,亚硝酸盐含量降低至5.67 mg/kg和7.08 mg/kg,均显著低于空白对照组(P<0.05),且发酵香肠的a*值、b*值和C值均显著高于空白对照组(P<0.05),表明AP1和AP2具有提高产品安全性以及促进发酵香肠发色的能力。随着发酵的进行,接菌组发酵香肠的肌原纤维断裂指数、肌原纤维蛋白水解指数、总巯基含量和表面疏水性显著增加,并且显著高于空白对照组(P<0.05),表明接种发酵可以促进肌原纤维蛋白的降解,使发酵香肠的感官品质得到提升。
Abstract:To investigate the potential of Kocuria rhizophila AP1 and Mammaliicoccus vitulinus AP2 as starter cultures for fermented sausages, AP1 and AP2 were separately inoculated into fermented sausages, and a natural fermentation group was used as a blank control. Changes in physicochemical properties, including viable bacterial count, pH value, color, and the degree of myofibrillar protein degradation, were analyzed during fermentation. The results showed that on day 1 of fermentation, the pH values of sausages inoculated with AP1 and AP2 decreased significantly to the lowest values of 5.86 and 5.83, respectively. After fermentation,the moisture contents of AP1 and AP2 groups decreased to 10.94% and 9.82%, and the nitrite content decreased to 5.67 mg/kg and 7.08 mg/kg, both significantly lower than those of the blank group (P<0.05). Additionally, the a*, b*, and C values of inoculated sausages were significantly higher than those of the blank group (P<0.05), indicating that AP1 and AP2 improved product safety and promoted color development. As fermentation progressed, the myofibrillar fragmentation index, myofibrillar protein hydrolysis index, total sulfhydryl content, and surface hydrophobicity in the inoculated groups increased significantly and were significantly higher than those in the blank group (P<0.05), indicating that inoculated fermentation promoted myofibrillar protein degradation and improved the sensory quality of the sausages.
