中文摘要: 辣木籽粕中含有丰富的活性成分,具有开发天然保鲜剂的潜力。该文测定不同浓度乙醇提取的辣木籽粕醇提物对副溶血性弧菌(Vibrio parahaemolyticus,VP)和金黄色葡萄球菌(Staphylococcus aureus,S. aureus)的抑菌效应,筛选出抑菌活性最强的醇提物,并测定其抑菌稳定性和对三文鱼保鲜效果。研究结果表明,60%乙醇提取物对VP、S.aureus的最小抑菌浓度分别为0.08、0.16 mg/mL,抑菌效果最好。60% 乙醇提取物经高温处理后,抑菌活性有所下降;酸处理对其抑菌活性基本无影响,碱处理后抑菌活性有所降低,但抑菌率仍在61%以上;长时间紫外照射对其抑菌活性无显著影响(P>0.05)。60%乙醇提取物可以有效抑制三文鱼pH值、脂质氧化、汁液流失率、色度、感官等指标的改变,经浓度为10 mg/mL辣木籽粕醇提物处理的三文鱼对微生物的抑制作用与对照组相比,其货架期延长了3 d左右。由此可见,60%乙醇提取的辣木籽粕醇提物具有良好的抑菌效果且抑菌活性稳定,可有效延长三文鱼的保质期。
Abstract:Moringa oleifolia seed meal is abundant in bioactive compounds, which may be utilized as natural preservatives. This paper explored the inhibitory effects of ethanol extracts of different concentrations from Moringa oleifolia seed meal on Vibrio parahaemolyticus (VP) and Staphylococcus aureus (S. aureus), selected the ethanol extracts with the strongest antibacterial activity, and determined their antibacterial stability and freshkeeping effect of salmon. The results showed that 60% ethanol extract had a better inhibitory effect on VP and S. aureus with minimal inhibitory concentration (MIC) of 0.08, 0.16 mg/mL, respectively. The antibacterial activity of 60% ethanol extract decreased after high-temperature treatment. Antibacterial activity was almost not affected by acid treatment. However, the antibacterial activity significantly decreased after alkali treatment, but the antibacterial efficiency was over 61%. Antibacterial activity was not significantly affected by longterm ultraviolet radiation (P>0.05). 60% ethanol extract could effectively inhibit the change in pH, lipid oxidation, juice loss, color, and sensory indexes of salmon. In terms of the inhibitory effect on microorganisms,compared with that of the control group, the shelf life of salmon treated with 10 mg/mL ethanol extract from Moringa oleifolia seed meal was extended by about 3 days. In summary, 60% ethanol extract from Moringa oleifolia seed meal had good antibacterial effects and stable antibacterial activity, which could effectively prolong the shelf life of salmon.
