中文摘要: 该文通过测定菌落总数、水分含量及质构等指标,研究0、4 ℃冷藏和-20 ℃冻藏条件下鲜腐竹的贮藏品质变化。结果表明,冷藏过程中,鲜腐竹的菌落总数、黏性均随贮藏时间延长呈上升趋势,而水分含量、硬度、弹性和回复性则逐渐下降,0 ℃和4 ℃下,鲜腐竹的货架期分别为10、5 d。气相色谱-质谱联用分析表明,鲜腐竹中醛类物质相对含量最高,己醛、(E)-2-辛烯醛、壬醛、庚醛等是构成鲜腐竹豆腥味的关键呈味物质;贮藏后鲜腐竹品质发生劣变,表现为酸类、醇类、烷烯烃类物质含量增加,醛类、杂环类、酮类、酯类物质含量减少。此外,冻藏也会影响鲜腐竹的贮藏品质,鲜腐竹在冻藏再解冻后色泽变暗,水分含量、硬度、断裂伸长率和抗拉强度均显著降低(P<0.05),T21、T22弛豫时间延后,持水力下降。
Abstract:The quality changes of fresh dried beancurd sticks under cold (0 , 4 ℃) and frozen (-20 ℃) storage were studied through the aerobic plate count, moisture, and texture indexes. The results showed that the aerobic plate count and adhesiveness of fresh dried beancurd sticks under cold storage showed an increasing trend, while moisture content, hardness, elasticity, and resilience decreased during storage. At 0 ℃ and 4 ℃, the shelf life of fresh dried beancurd sticks was 10 d and 5 d, respectively. The gas chromatographymass spectrometry analysis showed that the relative content of aldehydes was the highest in fresh dried beancurd sticks. Hexaldehyde, (E)-2-octenal, nonaldehyde, and heptanaldehyde were the main flavorful substances contributing to the beany flavor of fresh dried beancurd stick. After storage, the quality of fresh dried beancurd sticks deteriorated, and the contents of acids, alcohols, alkanes, and olefins increased. The contents of aldehydes, heterocycles, ketones, and esters decreased. In addition, frozen storage also affected the quality of fresh dried beancurd sticks. The color of fresh dried beancurd sticks became darker after thawing,and the moisture content, hardness, elongation at break, and tensile strength were significantly reduced (P <0.05). The relaxation time T21 and T22 of fresh dried beancurd sticks was delayed, and the holding water capacity was decreased after frozen storage.
