中文摘要: 该研究采用溶剂挥发法制备鸡卵白蛋白纳米颗粒(ovalbumin nanoparticles,OVA-NPs),并通过粒径和电位对纳米颗粒的性质进行表征。通过透射电子显微镜、扫描电子显微镜和原子力电子显微镜观察OVA-NPs的微观结构。结果表明,OVA-NPs对姜黄素(curcumin,Cur)的包载量与Cur含量呈现线性可控的关系,最大包载率达到96%。在相同温度下,负载Cur的OVA-NPs(Cur-OVA NPs)表现出较高的DPPH自由基清除率。此外,Cur-OVA NPs稳定的Pickering乳液具有出色的抗脂质氧化性能和贮藏稳定性。综上,OVA-NPs作为疏水性营养素的递送载体和稳定Pickering乳液方面具有一定的应用前景。
Abstract:Ovalbumin nanoparticles (OVA-NPs) were prepared by solvent volatilization and the properties of OVA-NPs were characterized in terms of particle size and potential. The microstructure of OVA-NPs was observed by transmission electron microscopy, scanning electron microscopy, and atomic force electron microscopy. The results showed that the encapsulation of curcumin (Cur) by OVA-NPs demonstrated a linear and controllable relationship between the amount of encapsulation and the concentration of Cur, with a maximum encapsulation rate of 96%. The OVA-NPs encapsulated with Cur (Cur-OVA NPs) exhibited higher DPPH radical scavenging activity at the same temperature. In addition, the Pickering emulsion stabilized by Cur-OVA NPs exhibited excellent anti-lipid oxidation properties and storage stability. In conclusion, OVA-NPs served as promising delivery carriers of hydrophobic nutrients and stabilizers of Pickering emulsions.
