中文摘要: 为满足罗非鱼预制菜品类多样化的发展需求,以罗非鱼为原料,经过切片、脱腥腌制、热风干燥、复水调味后,通过感官评价、理化检测、质构测定、电子鼻分析研究不同烤制条件对罗非鱼片品质的影响。结果表明:鱼片在160 ℃烤制20 min、180 ℃烤制14 min和200 ℃烤制12 min时,感官评分较高,其中200 ℃烤制12 min的鱼片水分含量最高,为71.5%,质构弹性最好,过氧化值和硫代巴比妥酸反应物(thiobarbituric acid reactants,TBARS)值分别为0.015 3 g/100 g和0.198 mg/100 g;通过电子鼻对烤制鱼片的顶空气味进行分析,传感器对氮氧化物、甲烷、硫化物和乙醇等灵敏,且200 ℃烤制12 min条件下气味响应值最高,表明电子鼻可以有效区分不同烤制条件下罗非鱼片的风味。
Abstract:In order to meet the diversified development needs of tilapia-based precooked dishes,tilapia was used as raw material in this study. After slicing,defishy pickling,hot air drying,rewatering,and seasoning,sensory evaluation,physical and chemical detection,texture determination,and electronic nose analysis were used to study the effects of different baking conditions on the quality of tilapia fillets. The results showed that the filet baked at 160 ℃ for 20 min,180 ℃ for 14 min,and 200 ℃ for 12 min had higher sensory scores.The filet baked at 200 ℃ for 12 min had the highest moisture content(71.5%)and the best texture elasticity. The values of peroxide and thiobarbituric acid reactants(TBARS)were 0.015 3 g/100 g and 0.198 mg/100 g,respectively. The headspace odor of baked fillets was analyzed using an electronic nose,and the sensors were sensitive to nitrogen oxides,methane,sulfides,and ethanol compounds. The highest odor response value was observed under baking conditions of 200 ℃ and 12 min,indicating that the electronic nose could effectively distinguish the flavor of tilapia fillets under different baking conditions.
