中文摘要: 葡萄酒的芳香复杂性主要受葡萄与发酵剂相互作用的影响,发酵剂包括酿酒酵母和非酿酒酵母。随着对非酿酒酵母研究的深入,发现非酿酒酵母对提高葡萄酒的香气复杂性有积极影响。非酿酒酵母对次生代谢产物的影响,也成为研究热点。该文对高级醇、酯类、乙醇、甘油、醛类、萜烯类等非酿酒酵母代谢物质进行综述,以期为葡萄酒的酿造技术提供新思路。
Abstract:The aroma complexity of wine is mainly affected by the interaction between grapes and starters,including Saccharomyces yeasts and non - Saccharomyces yeasts. With the in - depth research on non -Saccharomyces yeasts,it is found that non-Saccharomyces yeasts has a positive effect on improving the aroma complexity of wine. The effect of non-Saccharomyces yeasts on secondary metabolites has also become a research hotspot. In this paper,the metabolites of non-Saccharomyces yeasts,such as higher alcohols,esters,ethanol,glycerol,aldehydes,and terpenes,were reviewed to provide new ideas for wine brewing technology.
