中文摘要: 甘薯渣含有丰富的可溶性膳食纤维,其具有持水性、保湿性、稳定性等性质,可以作为食品添加剂使用,还具有改善肠道功能、调节血脂血糖、提高免疫力等生理功能,是良好的功能食品资源,但未得到充分利用。该文分析甘薯可溶性膳食纤维的组成、结构和性质,在此基础上对其提取分离方法进行总结,并探讨其生理活性功能,以期对其合理化开发和资源化利用提供参考。
Abstract:Sweet potato residue has abundant soluble dietary fiber (SDF),which is not fully utilized. SDF has water binding capacity,moisturizing,and stability,which can be used as a food additive. It can improve intestinal function,regulate blood sugar and lipids,and enhance immunity,serving as an ideal functional food resource. In this paper,the composition,structure,and properties of SDF from sweet potatoes were analyzed,and then its extraction and separation methods were summarized. Finally,its physiological activity function was discussed,so as to provide a reference for the development and resource utilization of SDF from sweet potatoes.
