中文摘要: 食品在加工及储藏过程中极易发生蛋白质氧化,导致蛋白质结构的改变及消化特性的下降,对机体的消化器官等部位易造成损伤。该文综述近年来蛋白质氧化对其结构、消化特性及机体健康的影响,归纳常用的蛋白质氧化分析技术以及抑制蛋白质氧化的常用手段,以期为进一步揭示蛋白质氧化机制进而抑制蛋白质氧化,以最大程度保留食品营养价值、延长储藏期及降低食品资源浪费提供理论依据。

Abstract:In the process of food processing and storage,protein oxidation is easy to occur,which leads to a change in protein structure and the decline of digestive characteristics,causing damage to the digestive organs and other parts of the body. In this paper,the effects of protein oxidation on its structure,digestive characteristics,and body health in recent years were reviewed,and the commonly used analysis techniques of protein oxidation and common means of inhibiting protein oxidation were summarized,so as to further reveal the mechanism of protein oxidation and inhibit protein oxidation and provide theoretical basis for maximizing the retention of food nutritional value,extending the storage period,and reducing the waste of food resources.
