中文摘要: 以新疆阿克苏地区鹰嘴豆为原料,对鹰嘴豆基本成分进行测定,采用碱溶酸沉的方法制备鹰嘴豆分离蛋白,分析分离蛋白的功能特性和结构特性。结果表明:鹰嘴豆分离蛋白的溶解性和起泡性在pH12 时最好,乳化性、乳化稳定性和起泡稳定性在pH10 时最好;其含有人体所需的多种必需氨基酸;此外,应用鹰嘴豆脱脂粉研制即食鹰嘴豆豆腐,最优配方为鹰嘴豆脱脂粉与大豆质量比1∶6、料液比1∶7 (g/mL)、白砂糖添加量5%、葡萄糖酸-δ-内酯添加量为0.25%。该配方所得即食鹰嘴豆豆腐硬度较低,胶着性、弹性和持水性较高,且蛋白质含量(>3.8%)符合GB/T 22106—2008《非发酵豆制品》中的要求,菌落总数(<100 000 CFU/g)和大肠菌群(<3.0 MPN/100 g)符合DB 45/320—2006《豆腐类、腐竹质量安全要求》中的要求。
Abstract:The basic components of chickpeas from Aksu,Xinjiang were determined. The method of alkali dissolution and acid precipitation was adopted to prepare chickpea protein isolate,and the functional and structural properties of the protein isolate were analyzed. The results showed that the solubility and foaming properties of chickpea protein isolate were the best at pH12,and the emulsifying property,emulsifying stability,and foaming stability were the best at pH10. The protein isolate contained all essential amino acids required by the human body. In addition,ready-to-eat chickpea tofu was developed with defatted chickpea powder. The optimal formula was as follows:the mass ratio of defatted chickpea powder to soybean of 1∶6,the solid-to-liquid ratio of 1∶7 (g/mL),the white sugar addition amount of 5%,and the glucono-δ-lactone addition amount of 0.25%. The ready-to-eat chickpea tofu prepared with this formula had low hardness and high gumminess,elasticity,and water-holding capacity. Moreover,the protein content (>3.8%) of the ready-to-eat tofu met the requirements of GB/T 22106—2008 Non-fermented Soybean Product,and the total number of colonies (<100 000 CFU/g) and coliform bacteria (<3.0 MPN/100 g) met the requirements of DB 45/320—2006 Quality and Safety Requirements for Tofu and Yuba.
