中文摘要: 为探讨活性-智能包装材料在水果保鲜中的应用效果,该试验采用双层结构设计,制备以真空冷冻干燥提取的紫薯花青素为指示剂的海藻酸钠-壳聚糖双层指示膜,测试紫薯花青素添加量对薄膜特性(溶解性能、阻隔性能、光学性能)和pH 响应性能的影响,并评价薄膜对蓝莓的保鲜效果。结果表明,紫薯花青素的添加增大薄膜厚度、水蒸气渗透性和透氧性,增强薄膜的可见光-紫外线阻隔性能和疏水性能,降低薄膜的含水量、水溶性、溶胀性,总体提升薄膜的物理性能。此外,所制双层膜在pH2~13 范围内产生显著的颜色响应,呈现红-粉-紫-蓝-绿-黄的颜色变化。蓝莓保鲜试验结果表明,紫薯花青素的添加使薄膜覆盖处理的蓝莓在贮藏期间的失重率和腐烂率降低,并减缓蓝莓在贮藏过程中的硬度、可溶性固形物含量、可滴定酸含量的降低速度,更好地保持蓝莓品质并延长其货架期。
Abstract:To explore the application effect of active-intelligent packaging materials in fruit preservation,a sodium alginate-chitosan bilayer film was prepared with anthocyanin extracted from purple sweet potatoes by vacuum freeze-drying as the indicator. Then,this study evaluated the effects of varying anthocyanin addition amounts on film properties (including dissolution,barrier,and optical properties) and pH response performance,as well as the preservation effect of the film on blueberries. Results showed that the addition of anthocyanin improved the overall physical properties of the film,which was realized by increasing the film thickness,water vapor permeability,and oxygen permeability,as well as the visible light-ultraviolet barrier properties and hydrophobicity of the film,while reducing the water content,water solubility,and swelling properties of the film. In addition,the bilayer film demonstrated significant color responses across the pH value range of 2-13,shifting colors from red to pink,purple,blue,green,and yellow. The blueberry preservation test results indicated that the addition of anthocyanin reduced the weight loss and decay rate of the film-covered blueberries during storage,and slowed down the decrease in hardness,soluble solid content,and titratable acid content.Therefore,anthocyanins endowed the bilayer film with good performance in maintaining the quality and extending the shelf life of blueberries.
