中文摘要: 酿酒玉米品种是白酒酿造的物质基础,决定白酒的出酒率和品质,对10 个酿酒玉米分别进行发酵试验,并对玉米酒的出酒率、杂醇油含量、酯类含量、乙酸含量等品质性状进行测量及分析。结果表明:籽粒淀粉含量和甲酸异戊酯含量主要通过直接作用正向影响出酒率,直接通径系数分别为0.68 和0.69,乙酸含量主要通过间接作用负向影响出酒率,总间接通径系数为-0.55。因此在酿酒玉米的育种目标中应提高玉米籽粒淀粉含量,在酿酒工艺改良中应适当提高甲酸异戊酯含量和降低乙酸含量。华试919 在主成分分析中综合评分为2.137,在10 个品种中得分最高,因此其兼顾大多酿酒玉米的有利性状,且华试919 在聚类分析中与其余品种差异较大,说明华试919 较其余品种在酿酒出酒率和品质方面表现突出,适宜作为白酒的酿酒原料。

Abstract:The brewing corn variety is the material foundation for liquor production,determining the yield and quality of the liquor. Fermentation tests were conducted on 10 corn varieties,and the yield,fusel oil content,ester content,acetic acid content,and other quality traits of the corn liquor were measured and analyzed. The results showed that starch content in the kernel and isoamyl formate content mainly had a direct positive effect on the alcohol yield,with direct path coefficients of 0.68 and 0.69,respectively. Acetic acid content mainly negatively affected the alcohol yield through an indirect effect,with a total indirect path coefficient of -0.55. Therefore,breeding goals for brewing corn should focus on increasing starch content in corn kernels,while brewing process improvements should aim to appropriately increase isoamyl formate content and reduce acetic acid content. Huashi 919 scored the highest in the principal component analysis with a comprehensive score of 2.137,making it the top scorer among the 10 varieties. This variety exhibited most of the favorable traits for brewing,and in cluster analysis,Huashi 919 showed significant differentiation from the other varieties,indicating its outstanding performance in alcohol yield and quality,making it suitable as a raw material for liquor production.
