中文摘要: 为研究不同包装方式对冷鲜鸡感官品质和贮藏期间微生物菌群多样性的影响,该研究采用聚乙烯(polythene,PE)保鲜膜包裹包装(A 组)、PE 袋空气包装(B 组)、聚对苯二甲酸乙二醇酯和聚乙烯(polyethylene terephthalate+polythene,PET+PE)复合食品袋真空包装(C 组)和铝箔食品袋真空包装(D 组)进行包装处理,通过加权评分法评价贮藏期间冷鲜鸡的感官品质,通过16S rDNA 高通量测序分析不同包装方式下的微生物菌群多样性。结果表明,根据感官品质评分认为A 组、B 组、C 组和D 组冷藏保鲜时间分别为5、7、9、9 d;挥发性盐基氮含量和菌落总数结果基本保持一致,A 组、B 组、C 组和D 组货架期分别为3、5、7、7 d;贮藏期至腐败期优势腐败菌属为希瓦氏菌属(Shewanella)、假单胞菌属(Pseudomonas)、类香味菌属(Myroides)、气单胞菌属(Aeromonas)和乳球菌属(Lactococcus),随着贮藏时间延长,不同包装条件微生物菌落多样性逐渐降低,丰度动态变化。
Abstract:In order to study the effects of different packaging methods on sensory quality and microbial diversity of chilled chicken during storage,polyethylene (PE) plastic wrap-assisted packaging (group A),PE bagassisted air packaging (group B),PET+PE composite food bag-assisted vacuum packaging (group C),and aluminum foil food bag-assisted vacuum packaging (group D) were used for packaging treatment. The sensory quality of chilled chicken during storage was evaluated by the weighted-scoring method,and the microbial diversity under different packaging methods was analyzed by 16S rDNA high-throughput sequencing. The results showed that the chilled chicken in group A,group B,group C,and group D for sensory quality scoring received cold storage treatment for five,seven,nine,and nine days,respectively. The results of volatile basic nitrogen(TVB-N) and aerobic plate count were basically consistent,and the shelf life of group A,group B,group C,and group D were three,five,seven,and seven days,respectively. The dominant putrid bacteria genera are Shewanella,Pseudomonas,Myroides,Aeromonas,and Lactococcus. As the storage time goes on,under different packaging conditions,microbial diversity decreased gradually,and their abundance changed dynamically.
