中文摘要: 为探究药食同源植物添加剂对羊肉挥发性风味物质和脂肪酸的影响,选取6 只蒙古绵羊与小尾寒羊的杂交羊分为高精料育肥组(CG)和高精料加药食同源植物添加剂育肥组(TG),每组3 只,并分析其背最长肌的挥发性风味物质及脂肪酸组成。结果表明:两组羊肉样品中共鉴定出54 种挥发性风味物质与29 种脂肪酸,其中TG 组中特征化合物环己酮、2-庚酮、3-羟基-2-丁酮与油酸等物质的含量高于CG 组;而硬脂酸、棕榈酸等物质的含量低于CG组,TG 组羊肉的气味更加丰富。综上所述,补饲药食同源植物添加剂改变了羊肉挥发性风味物质的种类和含量,改善了羊肉脂肪酸比例。

Abstract:The effects of a plant additive with both medicinal and edible values on the volatile flavor substances and fatty acids of mutton were studied. Six hybrid male lambs of Mongolian sheep and small tail Han sheep were selected and assigned into a high-concentrate diet(CG) group and a high-concentrate diet+plant additive (TG) group,with three lamps in each group. The composition of volatile flavor substances and fatty acids of longissimus dorsi muscle was determined in both groups. The results showed that a total of 54 volatile flavor substances and 29 fatty acids were identified from the mutton samples of both groups. The TG group had higher content of cyclohexanone,2-heptanone,3-hydroxy-2-butanone,and oleic acid and lower content of stearic acid and palmitic acid than the CG group. The smell of mutton in the TG group was richer than that in the CG group. In conclusion,the types and content of volatile flavor substances and the proportion of fatty acids in mutton were improved by the plant additive with both medicinal and edible values.
