中文摘要: 以南美白对虾为研究对象,以退火温度、退火时间、升温速率为因素优化南美白对虾仁肌肉玻璃转化温度(glass transition temperature,Tg′),差示扫描量热(differential scanning calorimetry,DSC)法扫描程序结果显示,最佳测定程序为退火温度-30 ℃、退火时间60 min、升温速率20 ℃/min。基于该程序,进一步研究虾仁肌肉水分含量、水分活度对其Tg′的影响,结果表明,当虾仁肌肉水分含量较高时,随水分含量升高Tg′降幅较小;当肌肉中水分活度(water activity,aw)小于0.682(水分含量低于20.07%)时,Tg′随水分活度的升高而急剧下降。此外,用焦磷酸钠、三聚磷酸钠、海藻糖、海藻胶寡糖和卡拉胶寡糖浸泡处理虾仁时,随着这些添加物浓度增加和浸泡时间延长,体系平均分子量会增加,从而导致虾仁肌肉Tg′整体升高。糖类添加物有效抑制虾仁肌肉水分含量的降低,且提高虾仁的Tg′,其提高程度由高到低依次为三聚磷酸钠、海藻糖、卡拉胶寡糖、海藻胶寡糖、焦磷酸钠。
Abstract:Differential scanning calorimetry (DSC) parameters,including the annealing temperature,annealing time,and heating rate,were optimized with the glass transition temperature (Tg′) of Litopenaeus vannamei muscle as an indicator. The results showed that the optimal DSC program was annealing at -30 ℃ for 60 min and heating at a rate 20 ℃/min. The optimal DSC program was then employed to determine the effects of moisture content and water activity on the Tg′ of L. vannamei muscle. The results showed that when the moisture content of L. vannamei muscle was high,the decrease in Tg′ became lower with the increase in moisture content. When water activity was less than 0.682 (the moisture content below 20.07%),Tg′ sharply decreased with the increase in water activity. In addition,L. vannamei muscle was soaked with sodium pyrophosphate,sodium triphosphate,trehalose,algin oligosaccharide,and carrageenan oligosaccharide. As the concentration of additives and soaking time increased,Tg′ gradually raised. Sugar additives effectively inhibited the decrease of moisture content in shrimp muscle and increased the Tg′ of shrimp. The degree of increase from high to low was sodium tripolyphosphate,trehalose,carrageenan oligosaccharide,alginate oligosaccharide,and sodium pyrophosphate.
