中文摘要: 该研究成功从酸菜发酵食品中分离并鉴定出一株戊糖片球菌(Pediococcus pentosaceus)M52,并对其培养条件、生理生化、安全性和益生特性等方面开展相关研究。结果显示,该菌株能够遏制食源性病原细菌如金黄色葡萄球菌、大肠杆菌及结核杆菌的生长,并表现出较强的耐受性。将其人工接种至发酵酸菜体系中发现,各项理化指标均优于自然发酵酸菜,且亚硝酸盐含量明显降低,葡萄糖利用率加快。戊糖片球菌(Pediococcus pentosaceus)M52 在蔬菜发酵中具有潜在的应用和开发价值,可以提高蔬菜发酵食品的安全性。
Abstract:In this study,a Pediococcus pentosaceus M52 strain was isolated and identified from a fermented sauerkraut food,and its cultivation conditions,physicochemical characteristics,safety,and probiotic properties were studied. The results showed that the strain could inhibit the growth of foodborne pathogenic bacteria such as Staphylococcus aureus,Escherichia coli,and Tubercle bacillus and showed strong tolerance. When it was artificially inoculated into the sauerkraut fermentation system,the physicochemical indexes were better than those of naturally fermented sauerkraut,and the nitrite content was significantly reduced;the glucose utilization rate was accelerated. Pediococcus pentosaceus M52 had potential application and development value in the fermentation of vegetables,which can improve the safety of fermented vegetable food.
