中文摘要: 近年来,我国水果及蔬菜行业快速发展,果蔬在采摘、运输和贮藏过程中易造成机械损伤、病原体侵染等。果蔬保鲜技术是通过减少果蔬有机物消耗来延长果蔬贮藏保鲜时间。在实际应用中,可根据果蔬的类型、生理差异、保鲜方法的特点和实际需求来选择合适的保鲜方法,从而达到对果蔬的保鲜效果。本篇综述对果蔬物理、化学和生物保鲜方法、果蔬保鲜剂应用方法、果蔬保鲜包装材料及果蔬保鲜设备进行探讨,旨在为果蔬保鲜提供参考。
Abstract:In recent years,China′s fruit and vegetable industry has witnessed rapid development. However,during the processes of harvesting,transportation,and storage,fruits and vegetables are prone to suffer from mechanical damages,pathogen infections,and the like. The fruit and vegetable preservation technology aims to extend the storage and preservation time of fruits and vegetables by reducing the consumption of their organic substances. In practical applications,appropriate preservation methods can be selected according to the types of fruits and vegetables,their physiological differences,the characteristics of various preservation methods,and actual needs,so as to achieve the desired preservation effect for fruits and vegetables.This review article explores the physical,chemical,and biological preservation methods for fruits and vegetables,the application methods of fruit and vegetable preservatives,the packaging materials for fruit and vegetable preservation,as well as the equipment used in fruit and vegetable preservation.The purpose is to provide references for the preservation of fruits and vegetables.
