中文摘要: 基于不同产地的三文鱼脂肪酸含量差异,采用脂肪酸指纹图谱对三文鱼产地溯源。采用气相色谱法对3 个产地三文鱼中37 种脂肪酸含量进行检测与统计分析。结果显示:25 种脂肪酸含量可作为中国、智利、挪威3 个三文鱼主产区产地溯源的特征指标,且对三文鱼产地整体正确判别率为100%,交叉检验正确判别率为93.3%,测试集判别正确率为88.9%,因此基于脂肪酸指纹图谱的三文鱼产地溯源方法可行。

Abstract:Based on differences in fatty acid content among salmon from different regions,fatty acid fingerprint was used for salmon origin traceability.Gas chromatography was employed to detect and analyze the content of 37 fatty acids in salmon samples from three different origins. The results revealed that 25 fatty acids could serve as characteristic indicators for tracing the origin of salmons from China,Chile,and Norway. The overall accuracy rate for correctly identifying the salmon origin was 100%,with a cross-validation accuracy rate of 93.3% and a testing set validation accuracy rate of 88.9%. Therefore,the salmon origin traceability method based on fatty acid fingerprints turns out to be feasible.
