中文摘要: 以黄果梨为原料,开发3 种不同类型黄果梨酒(黄果梨干酒、黄果梨半甜酒、黄果梨甜酒),对黄果梨酒的理化指标、功能性成分、抗氧化活性进行测定,并利用顶空固相微萃取-气相色谱质谱联用技术,分析黄果梨酒的挥发性香气物质及含量之间的差异。结果表明,3 种不同类型黄果梨酒中,黄果梨干酒的总酚含量、总黄酮含量分别为663.36、59.12 mg/L。黄果梨干酒、黄果梨半甜酒、黄果梨甜酒中分别检测出44、42、38 种香气物质,共有12 种香气物质。主成分分析结果显示,3 种不同类型黄果梨酒挥发性香气物质风格差异区分明显,黄果梨干酒与10-十-炔-1-醇、9-癸烯酸乙酯、亚硫酸二甲酯、5-甲基己酸乙酯、橙花叔醇靠近,它们给酒体带来李子、玫瑰、铃兰和苹果花等香气。感官评价结果表明,黄果梨干酒整体评分较高,平衡性好,酒体澄清透亮,结构感强。
Abstract:Three different wine products with low,medium,and high sugar content were developed with the fruits of Pyrus bretschneideris Rehd. as the raw material. The physicochemical indexes,functional components,and antioxidant activities of the three products were determined.Headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry was employed to compare the volatile aroma compounds and their content among the three products.The results showed that the total phenol content and total flavonoid content of the product with low sugar content were 663.36 mg/L and 59.12 mg/L,respectively. A total of 44,42,and 38 aroma compounds were detected in the products with low,medium,and high sugar content,respectively,among which 12 aroma compounds were detected in all the three products. The principal component analysis clearly distinguished the volatile aroma compounds of the three P. bretschneideri wine products.The compounds 10-deca-yn-1-ol,ethyl 9-decenoate,dimethyl sulfite,ethyl 5-methylhexanoate,and nerolidol endowed the product with low sugar content with the aromas of plum,rose,lily of the valley,and apple blossoms. The results of the sensory evaluation showed that the product with low sugar content had high overall score and distinct flavor,being clear and translucent.
