中文摘要: 为研发一款低血糖生成指数(glycemic index,GI)蛋糕,该试验以具有云南大理特色的刺菱角和白芸豆为主要原料,以感官评分为评价指标,通过单因素试验和正交试验确定低GI 蛋糕的最优配方。结果表明:最优配方为刺菱角粉添加量14.0 g、白芸豆粉添加量11.0 g、全麦粉添加量9.0 g、小麦粉添加量12.0 g、水添加量36.0 g、木糖醇添加量30.0 g。在该条件下,其感官评分为82.5,成品口感适宜、组织细腻、孔隙均匀、弹性适中、不过分甜腻,同时具有独特的刺菱角和白芸豆香味的特点。通过人体实验测试,该蛋糕GI 值为53.3(<55),属于低GI 食品,且能量、脂肪、碳水化合物和钠含量均低于对照糕点,但其蛋白质含量显著高于对照糕点。
Abstract:To develop a low-glycemic index(GI)cake,this experiment used water chestnut and white kidney bean,both characteristic of Dali in Yunnan,as the main ingredients. Sensory scores were used as evaluation indexes to determine the optimal formulation of the low-GI cake through one-way and orthogonal tests. The results showed that the optimal formulation consisted of 14.0 g of water chestnut powder,11.0 g of white kidney bean powder,9.0 g of whole wheat flour,12.0 g of wheat flour,36.0 g of water,and 30.0 g of xylitol. Under these conditions,the sensory score was 82.5,and the finished product had a suitable texture,fine structure,uniform pore size,moderate elasticity,and was not overly sweet or greasy.It also had a unique aroma of water chestnut and white kidney bean. Human trials showed that the GI value of the cake was 53.3(<55),classifying it as a low-GI food. Additionally,key indexes for energy,fat,carbohydrate,and sodium content were lower than those of the control pastry,while its protein content was significantly higher than that of the control pastry.
