中文摘要: 为优化燕麦米酒的发酵工艺,确定最佳发酵条件,提高燕麦米酒的感官品质,该研究通过单因素试验、Plackett-Burman 试验和Box-Behnken 响应面设计,考察燕麦与糯米质量比、蒸煮时间、混合米料液比、酒曲添加量、发酵温度和发酵时间对燕麦米酒感官品质的影响,并对米酒的理化指标进行测定。研究结果表明,燕麦米酒的最佳发酵工艺条件为燕麦与糯米质量比1∶1.3、蒸煮时间35 min、混合米料液比1∶1.0(g/mL)、酒曲添加量0.8%、发酵温度28 ℃、发酵时间6 d,在此工艺条件下酿造的燕麦米酒酒体呈淡黄色,口感圆润,酸甜适中,具有浓郁的燕麦和米酒香气;其酒精度为8.75%vol,总酸含量为0.24 g/100 g,还原糖含量为17.56 g/100 g,均符合相关国家相关标准。
Abstract:The fermentation process of oat rice wine was optimized to improve the sensory quality of the product.Single factor tests,Plackett-Burman design,and Box-Behnken design were employed to investigate the effects of the mass ratio of oat to glutinous rice,cooking time,solid-to-liquid ratio,starter addition amount,fermentation temperature,and fermentation time on the sensory quality of oat rice wine. Furthermore,the physicochemical indexes of oat rice wine were determined.The results showed that the optimum fermentation conditions of oat rice wine were as follows:the mass ratio of oat to glutinous rice of 1∶1.3,cooking time of 35 min,solid-to-liquid ratio of 1∶1.0(g/mL),starter addition amount of 0.8%,and fermentation at 28 ℃for 6 d. The oat rice wine brewed under the optimal conditions had a light yellow color,mellow taste with moderate sweet and sour,and strong oat and rice wine aromas. The content of alcohol,total acid,and reducing sugar was 8.75% vol,0.24 g/100 g,and 17.56 g/100 g,respectively,all of which met the requirements in relevant national standards.
