中文摘要: 以纯牛乳为主要原料,以白果淀粉为增稠剂,经乳酸菌发酵制备凝固型酸奶。通过对酸奶感官品质、质构、总菌落数、乳清析出率、流变学性质等指标进行测定,确定最佳的白果淀粉添加量为3.5%。在该白果淀粉添加量下,发酵酸奶的乳清析出率显著降低,凝胶特性(表观黏度、抗剪切性、弹性等)增强,乳杆菌菌落数和嗜热链球菌菌落数与对照组持平,但嗜热链球菌菌落数较其他各组显著提高,表现出优良的益生菌特性。
Abstract:In this study,set yogurt was made by lactic acid bacteria fermentation,with pure milk as the raw material and ginkgo starch as the thickening agent. Through the determination of the sensory quality,texture,total probiotics,whey precipitation rate,rheological properties,and other indicators of the yogurt,the optimal amount of ginkgo starch was determined to be 3.5%. Under this condition,the whey precipitation rate in the fermented yogurt significantly reduced,while the gel properties were enhanced such as apparent viscosity,shear resistance,and elasticity,the Lactobacillus and Bifidobacterium colony count were on par with the control group,but Streptococcus thermophilus colony count was significantly higher than that of the other groups,demonstrating excellent probiotic characteristics.
