中文摘要: 该文以大连产刺参为研究对象,利用乳酸菌和甜酒曲对熟制海参进行发酵,分别得到酸香味和醇香味的海参制品,测定其挥发性风味物质的构成,同时,利用十二烷基硫酸钠聚丙烯酰胺凝胶电泳(sodium dodecyl sulfate polyacrylamide gel electrophoresis,SDS-PAGE)检测两种发酵海参制品中的蛋白质构成。结果表明,从酸香味海参中共检出46 种挥发性物质,醇香味海参中共检出51 种挥发性物质。海参经发酵后,其含有的蛋白质被有效降解,通过气相色谱质谱联用检测海参发酵制品中的氨基酸含量,发现构成蛋白质的20 种氨基酸的含量显著增加,因此发酵法可以明显改善熟制海参的风味,有效改善海参制品的蛋白营养的构成,促进人体的消化吸收。

Abstract:The cooked sea cucumber was fermented by lactic acid bacteria and sweet wine curd with Dalian sea cucumber as the research object,and sea cucumber products with sour and mellow flavors were obtained respectively. The composition of volatile flavor substances was determined,and a total of 46 volatile substances were detected in sea cucumbers with sour flavor,and a total of 51 volatile substances were detected in sea cucumbers with mellow flavor,which indicated that the fermentation method could improve the flavor of cooked sea cucumber.Meanwhile,the protein composition of the two fermented sea cucumber products was detected by sodium dodecyl sulfate polyacrylamide gel electrophoresis(SDS-PAGE). It was found that the proteins contained in the sea cucumber were effectively degraded after fermentation.The amino acid content of the fermented sea cucumber products was detected by gas chromatography-mass spectrometry. It was found that the content of 20 amino acids constituting proteins was significantly increased,which indicated that the fermentation method could effectively improve the protein nutrients of the sea cucumber products,and promote digestion and absorption of the human body.
