中文摘要: 为提高干制枸杞品质、减少干燥时间,采用清水和不同质量分数(2%、4%和6%)的Na2CO3 溶液对枸杞进行浸泡处理后,分别进行自然干燥和热风干燥,测定所获得枸杞干果的色泽、复水率,并分析其微观结构和挥发性物质。结果表明:采用质量分数为2%的Na2CO3 溶液预处理后热风干燥的枸杞品质最优。干燥方式方面,热风干燥明显优于自然干燥,热风干燥的干燥时间短且所得成品总色差值小、复水率高、挥发性物质含量高,但因其温度高破坏了枸杞细胞结构,使其结晶度低于自然干燥。碱液浓度方面,经过碱液处理的枸杞发生皂化反应,去除表面的蜡质层,增加细胞膜的通透性,形成水分通道,干燥时间减少、干制枸杞色差值减小、复水率增大,但由于经碱液处理后,枸杞中纤维素部分溶解,其结晶度下降。随着碱液浓度的增加,总色差值、复水率会小幅度升高,但基本无差异。
Abstract:The method for improving the quality of dried fruits of Lycium barbarum and reducing the drying time was studied. The dried fruits of L. barbarum were soaked with water or Na2CO3 solution with different mass fractions(2%,4%,and 6%),and dried under natural conditions or by hot air. The color and rehydration rate of the dried fruits were determined,and the microstructure and volatile substances were analyzed.The results showed that the best treatment was hot air drying after pretreatment with 2% Na2CO3. In terms of drying methods,hot air drying was obviously superior to natural drying,since it required short drying time and the fruits dried by hot air had a small color difference,a high rehydration rate,and high volatile substance content.However,hot air drying destroyed the cell structure and led to a decline in fruit crystallinity compared with natural drying.The treatment with Na2CO3 led to saponification,which removed the wax layer on the fruit surface,increased the permeability of cell membrane,promoted the formation of water channels,shortened the drying time,decreased the color difference value,and increased the rehydration rate. However,the treatment with Na2CO3 solution dissolved the cellulose,resulting in decreased crystallinity. With the increase in the Na2CO3 concentration,the total color difference value and the rehydration rate increased slightly without significant changes.
