中文摘要: 为探究增香酶酶解技术对浓缩桃汁增香效果的影响,采用4 种不同的酶制剂对浓缩桃汁进行酶解,利用气相色谱-离子迁移谱(gas chromatography-ion mobility spectroscopy,GC-IMS)技术分析检测并定性出39 种物质,采用指纹图谱和主成分分析(principle component analysis,PCA)对比不同酶制剂处理后挥发性成分差异。结果表明,酶处理后浓缩桃汁香气成分增加,其中Smart Clear Plus 果浆酶对桃汁中挥发性成分种类的增加效果最佳,主要增加2-苯乙醛、反式-2-丁烯酸乙酯、2-甲基丁酸乙酯、2-甲基丙酸乙酯和丙酮酸乙酯等挥发性芳香物质,研究结果有利于浓缩桃汁产品品质的提高。
Abstract:To investigate the effects of enzymatic hydrolysis with aroma-enhancing enzymes on aroma enhancement of peach juice concentrate,this study used four different enzyme preparations for enzymatic hydrolysis of peach juice concentrate.A total of 39 substances were detected and identified by using gas chromatography-ion mobility spectrometry(GC-IMS),and the fingerprint and principle component analysis(PCA)were employed to compare the differences of volatile components after treatment with different enzyme preparations. It was found that the enzymatic hydrolysis can increase the aroma components of peach juice concentrate. The Smart Clear Plus pulp enzyme had the best effect on the increase in the volatile components in peach juice,mainly increasing the fruit aroma components such as 2-phenylacetaldehyde,ethyl trans-2-butenoate,ethyl 2-methylbutyrate,ethyl 2-methylpropanoate,and ethyl pyruvate.The findings are conducive to quality improvement of peach juice concentrate products.
