中文摘要: 该文以油菜籽为原料,采用螺旋压榨法、液压压榨法、溶剂浸提法和水酶法4 种工艺提取菜籽油并收集菜籽饼粕,对比不同提取方法对菜籽油及菜籽蛋白品质的影响。结果表明:4 种工艺提取菜籽油的理化指标差异明显,其中螺旋压榨菜籽油酸价最高,为0.58 mg/g;液压压榨菜籽油皂化值最高,为189.91 mg/g;脂肪酸组成及含量差异不明显,均检测出5 种脂肪酸,其中油酸含量最高、硬脂酸含量最低;溶剂浸提菜籽油的过氧化值变化最小,其氧化稳定性在4 组样品中最稳定,而水酶法最差。不同提取方法对菜籽蛋白红外光谱峰强度及β-螺旋、β-折叠含量造成不同程度的影响,液压压榨菜籽蛋白的持水性、持油性最高,水酶法菜籽蛋白的起泡性、持水性和持油性最低,螺旋压榨菜籽蛋白的溶解性最低。
Abstract:In this study,rapeseed was utilized as the raw material for oil extraction and rapeseed meal collection using four methods of screw pressing,hydraulic pressing,solvent extraction,and aqueous enzymatic extraction to compared the effects of these extraction methods on the quality of rapeseed oil and rapeseed protein.The results indicated significant differences in the physicochemical properties of the rapeseed oil extracted by the four methods. The acid value was highest in the screw-pressed oil at 0.58 mg/g,while the saponification value was highest in the hydraulically pressed oil at 189.91 mg/g. The fatty acid composition and content showed little variation,with five fatty acids detected in all samples,among which oleic acid content was the highest and stearic acid the lowest. The solvent-extracted oil exhibited the smallest change in peroxide value,indicating the highest oxidative stability among the four samples,whereas the aqueous enzymatic extraction method resulted in the least stable oil.Also,the extraction methods differentially affected the infrared spectral peak intensities,and the contents of β-helix and β-folding in the rapeseed protein. The hydraulically pressed protein showed the highest water-holding and oil-holding capacities,while the protein extracted with the aqueous enzymatic method was lowest in foaming,water-holding,and oil-holding capacities. The screw-pressed protein demonstrated the lowest solubility.
