中文摘要: 为提高荔枝汁加工效率和产品品质,采用高压射流磨处理荔枝汁,探究高压射流磨不同处理压力(0~120 MPa)对荔枝汁稳定性、微观结构、理化性质和营养物质的影响。结果表明,ISMS 处理能够有效提高荔枝汁稳定性,随着处理压力从0 MPa 增加到120 MPa,荔枝汁平均粒径D50 由287.30 μm 下降至38.80 μm,不稳定指数由0.41降至0.25,黏度呈下降趋势,离心沉淀率从8.20%降至5.08%,浊度从3 200 NTU 增加至4 270 NTU。同时压力增加改变荔枝汁微观结构,纤维组织尺寸变小,颗粒物质分布均匀。随着处理压力增加,荔枝汁L*值、ΔE 值和色泽未发生显著性变化,pH 值、可溶性固形物含量略有下降,还原糖、总酚、总黄酮物质保留率分别为89.69%、89.87% 和72.46%,可溶性蛋白含量由0.86 mg/mL 增加到4.55 mg/mL。综上,ISMS 处理能较好地保持荔枝汁原有品质,对细胞壁和纤维组织具有良好的粉碎效果,无需除渣过滤处理,易实现连续化生产,且可直接用于加工高品质荔枝原汁产品。
Abstract:The industrial-scale microfluidizer system(ISMS)was used to treat lichi juice,thus improving the processing efficiency and product quality.The effects of different processing pressures(0-120 MPa)on the stability,microstructure,physicochemical properties,and nutrient components of litchi juice were investigated.The results showed that the ISMS treatment effectively improved the stability of lichi juice. As the treatment pressure increased from 0 MPa to 120 MPa,the average particle size D50 of litchi juice decreased from 287.30 μm to 38.80 μm,and the instability index decreased from 0.41 to 0.25.The viscosity also decreased,and the centrifugal sedimentation rate decreased from 8.20%to 5.08%.Meanwhile,the turbidity increased from 3 200 NTU to 4 270 NTU. As the treatment pressure increased,the microstructure of lichi juice changed,with a decreasing size of the fiber tissue and even distribution of the particulate matter.There was no significant change in L*value,ΔE value,or color as the treatment pressure increased. However,the pH and total soluble solids of litchi juice slightly decreased,and the retention rates of reducing sugars,total phenols,and total flavonoids were 89.69%,89.87%,and 72.46%,respectively. The soluble protein content increased from 0.86 mg/mL to 4.55 mg/mL. In conclusion,ISMS treatment can well maintain the original quality of lichi juice and had good pulverizing effects on the cell wall and fibrous tissue. It achieves continuous production without dreg filtering and can be directly used for processing high-quality lichi juice products.
