中文摘要: 探讨不同渗糖方式对杏脯色泽、质构特性、总糖含量、复水性、微观结构、感官品质和挥发物质的影响。结果表明:超声波渗糖方式制备的杏脯亮度及黄色保持较好,显著优于其他3 种渗糖方式(P<0.05);经物性测试仪检测,超声波渗糖制得的样品硬度、弹性和咀嚼性也显著高于真空、微波和煮制渗糖(P<0.05);与其他渗糖方式相比,超声波渗糖方式的杏脯复水率始终保持在较低水平(P<0.05),保藏性较好;经透射电镜观察,超声波渗糖方式可显著减少蔗糖渗透对杏脯细胞的损伤,细胞具有较强的致密性和较好的细胞结构,所制杏脯感官评分最高,为90.8;采用气相色谱-质谱联用(gas chromatography-mass spectrometry,GC-MS)仪检测发现,杏脯中挥发性物质(醛类、醇类和酯类等)在超声波渗糖中含量较高,质量分数为61.89%,其次为煮制渗糖(52.96%)和微波渗糖(46.74%),真空渗糖含量较低,为29.59%,说明超声波渗糖工艺下杏脯的果香、花果香及清香相对其他渗糖方式更浓郁。超声波渗糖杏脯的品质综合表现较佳,更加适合于杏脯加工。
Abstract:The effects of different sugar infiltration methods on the color,textural properties,total sugar content,rehydration,microstructure,sensory quality,and volatile components of preserved apricot were investigated.The results showed that the brightness and yellow color of preserved apricot prepared by ultrasonic sugar infiltration were better than those prepared by the other three sugar infiltration methods(P<0.05). The hardness,elasticity,and chewiness of the samples prepared by ultrasonic sugar infiltration were also higher than those prepared by vacuum-,microwave-,and boiling-assisted sugar infiltration(P<0.05).The preserved apricot prepared by ultrasonic sugar infiltration had lower rehydration rate than that prepared by other sugar infiltration methods(P<0.05),demonstrating good preservation performance. Scanning electron microscopy showed that ultrasound sugar infiltration could significantly reduce the damage of sugar infiltration to apricot cells,which had strong compactness and intact structures. Moreover,the preserved apricot prepared by ultrasonic sugar infiltration had the highest sensory score of 90.8.The results of gas chromatography-mass spectrometry showed that the ultrasonic sugar infiltration group had the highest mass fraction(61.89%)of volatile components(aldehydes,alcohols,and esters)of preserved apricot,followed by the boiling-assisted sugar infiltration group(52.96%)and microwave-assisted sugar infiltration group(46.74%),and the vacuum-assisted sugar infiltration group had the lowest mass fraction(29.59%),which indicated that the preserved apricot prepared by ultrasonic sugar infiltration had more fruity,floral,and fragrant flavors than that prepared by other sugar infiltration methods. Comprehensive evaluation suggested that the quality of preserved apricot prepared by ultrasonic sugar infiltration was better,and thus this method was suitable for preserved apricot processing.
