中文摘要: 为研究不同磁场环境辅助冷冻对鱼糜品质的影响,以草鱼鱼糜为研究对象,在0、2、4、6 mT 的磁场辅助冷冻下,分析鱼糜冷冻温度曲线、白度、持水性、质构和蛋白热稳定性的变化。结果表明,磁场辅助冷冻可缩短相变时间,但对冻结温度无显著影响。随着磁场强度的增加,鱼糜的白度、持水性呈先上升后下降的趋势,与对照组相比,4 mT磁场环境下白度和持水性分别提高39.10%和20.14%。4 mT 和6 mT 磁场环境可改善鱼糜质构,同时,4 mT 下鱼糜蛋白的热稳定性显著提升。磁场辅助冷冻可改善冷冻处理造成的鱼糜品质下降,且4 mT 的磁场辅助效果较好。
Abstract:In order to study the effects of different magnetic field environment-assisted freezing on the quality of surimi,surimi of Ctenopharyngodon idellus was used as the research object,and the changes in the temperature curve,whiteness,water-holding properties,texture,and protein′s thermal stability of frozen surimi were analyzed under magnetic field-assisted freezing at 0,2,4 mT,and 6 mT. The results showed that magnetic field-assisted freezing could shorten the phase transition time but had no significant effect on the freezing temperature. The whiteness and water-holding properties of surimi showed a tendency of first increasing and then decreasing with the increase in magnetic field strength,and the whiteness and water-holding properties were increased by 39.10% and 20.14%,respectively,compared with the control in the magnetic field environment of 4 mT. The texture of surimi could be improved in the magnetic field environments of 4 mT and 6 mT,and meanwhile,the protein′s thermal stability of surimi was significantly improved in the magnetic field environment of 4 mT.Magnetic field-assisted freezing could improve the quality degradation of surimi caused by freezing treatment,and the magnetic field-assisted effect was better at 4 mT.
