中文摘要: 为研究马铃薯淀粉特性对其鲜湿粉条贮藏品质的影响,分析3 种不同来源马铃薯淀粉的化学成分和物化特性,并探讨其对马铃薯鲜湿粉条在常温(25 ℃)和低温(4 ℃)贮藏条件下质构特性与微观结构的影响。结果表明,3 种不同来源马铃薯淀粉的淀粉含量为89.38%~93.67%、糊化温度为68.63~70.52 ℃,三者回生值、溶解度和膨胀势无显著差异。与常温(25 ℃)贮藏相比,低温(4 ℃)贮藏能更好地维持马铃薯鲜湿粉条的质构与网络结构。相关性分析结果显示,4 ℃条件下,马铃薯淀粉的脂肪、灰分、磷含量与其鲜湿粉条的煮断时间呈显著负相关,而马铃薯淀粉的老化值、溶解度、膨胀势、回生黏度与其鲜湿粉条的拉伸强度呈显著正相关,与其鲜湿粉条的煮断时间呈极显著正相关。
Abstract:To investigate the effects of potato starch characteristics on the storage quality of wet potato vermicelli,this study analyzed the chemical composition and physicochemical characteristics of three different sources of potato starch and explored their effects on the textual characteristics and microstructure of wet potato vermicelli under room temperature(25 ℃)and low temperature(4 ℃)storage conditions.The results indicated that the starch content of potato starch from three different sources ranged from 89.38%to 93.67%,the gelatinization temperatures ranged from 68.63 ℃to 70.52 ℃,and there were no significant differences observed in retrogradation degree,solubility,and swelling power among them. Compared with storage at room temperature(25 ℃),storage at low temperature(4 ℃)could better maintain the texture and network structure of wet potato vermicelli.The correlation analysis results showed that the lipids,ash,and phosphorus content of potato starch were significantly negatively correlated with the breaking time of its wet vermicelli at 4 ℃,while retrogradation value,solubility,swelling power,and retrogradation viscosity of potato starch are significantly positively correlated with tensile strength of its wet vermicelli,and extremely significantly positively correlated with the breaking time of its wet vermicelli.
