基于GC 对不同加工阶段凤冈锌硒茶指纹图谱分析

中文摘要: 为建立凤冈锌硒茶不同加工过程的气相色谱(gas chromatography,GC)指纹图谱,并结合化学模式识别法探究不同加工过程凤冈锌硒茶挥发性成分差异,评价不同加工阶段凤冈锌硒茶的质量以及加工工艺,采用顶空固相微萃取技术提取样品,通过GC 法建立30 批不同加工阶段的凤冈锌硒茶的指纹图谱,并进行相似度评价;通过聚类分析(cluster analysis,HCA)、主成分分析(principal component analysis,PCA)和正交偏最小二乘法‐判别分析(orthogonal par‐tial least squares‐discriminant analysis,OPLS‐DA)模式识别技术对不同加工阶段凤冈锌硒茶指纹图谱的共有峰进行分析。结果表明,30 批不同加工阶段的凤冈锌硒茶GC 指纹图谱共匹配到21 个共有峰,与对照品对比得出,3 号共有峰为芳樟醇,9 号共有峰为香叶醇,指纹图谱相似度范围为0.814~0.987。HCA 将30 批凤冈锌硒茶分为3 类,其加工后的样品聚为一类;PCA 发现加工前后凤冈锌硒茶差异较大,加工前后各为一类;经OPLS‐DA 筛选出10 个差异成分。
Abstract:To establish the gas chromatography(GC)fingerprint of Fenggang zinc‐selenium tea at different pro‐cessing stages,the chemical pattern recognition method was used to explore the differences of volatile compo‐nents in Fenggang zinc‐selenium tea at different processing stages and evaluate the quality and processing tech‐nology of Fenggang zinc‐selenium tea at different processing stages. The samples were extracted by headspace solid‐phase microextraction,and the fingerprints of 30 batches of Fenggang zinc‐selenium tea at different pro‐cessing stages were established by GC,and their similarity was evaluated. Cluster analysis(HCA),principal component analysis(PCA),and orthogonal partial least square discriminant analysis(OPLS‐DA)pattern rec‐ognition technology were used to analyze the common peaks of the fingerprints of Fenggang zinc‐selenium tea at different processing stages. The results showed that 21 common peaks were matched among the GC finger‐prints of 30 batches of Fenggang zinc‐selenium tea at different processing stages. The common peak 3 was lin‐alool,and the common peak 9 was geraniol by comparison with the control product.The similarity of the finger‐prints was in the range of 0.814-0.987. HCA divided 30 batches of Fenggang zinc‐selenium tea into three cat‐egories,and the processed samples were grouped into one group. Fenggang zinc‐selenium tea was different be‐fore and after processing by PCA and grouped into two groups.10 different components were screened by OPLS‐DA.
