中文摘要: 该试验以白芸豆粉、麦芽糖醇、糯米粉、植物油和普洱熟茶提取物为原料,采用单因素试验和响应面试验优化工艺配方,通过质构检测和稳定性试验测定最佳配方茶果子的质构特征和稳定性。结果表明:最佳工艺条件为以白芸豆粉为基准,麦芽糖醇添加量15%、糯米粉添加量17%、植物油添加量20%、普洱熟茶提取物添加量175%,此条件下制得的普洱熟茶茶果子外形饱满完整,有普洱熟茶色泽和陈香,内部组织状态良好,口感顺滑细腻,口味新颖独特。通过质构检测和稳定性试验得出茶果子硬度降低、黏附性增加,易于加工;茶果子的感官指标、理化指标和微生物指标均达到产品的质量标准要求。
Abstract:The experiment used white kidney bean powder,maltitol,sweet rice flour,vegeTableoil,and ripe Pu‐erh tea as raw materials.Single‐factor experiments and response surface method were employed to optimize the process formula. The texture characteristics and stability of the optimal formula for tea cakes were determined through texture detection and stability tests. The results indicated that the best process conditions were based on white kidney bean powder,with a maltitol addition of 15%,sweet rice flour of 17%,vegeTableoil of 20%,and ripe Pu‐erh tea extract of 175%.Under these conditions,the ripe Pu‐erh tea cakes had a full and complete shape,with the color and aroma of ripe Pu‐erh tea,a good internal texture,a smooth and delicate taste,and a novel and unique flavor. The texture detection and stability tests showed that the hardness of the tea cakes de‐creased,and their cohesiveness increased,making them easy to process. The sensory,physical and chemical,and microbial indicators of the tea cakes all met the quality standards required for the product.
