基于模糊数学法的粉木耳蛋糕配方优化及其品质分析

中文摘要: 为提高粉木耳的附加值同时满足人们对新型烘焙食品的需求,制作一款具有粉木耳风味的蛋糕。该研究运用单因素试验,以感官评分、比容、质构特性为评价指标,探究不同添加量的粉木耳、白砂糖、纯牛奶、玉米油对粉木耳蛋糕的影响。基于模糊数学感官评价法,通过正交试验优化粉木耳蛋糕的配方,并检测了成品蛋糕的理化指标和微生物指标。结果表明,粉木耳蛋糕的最佳工艺配方为:粉木耳10.0 g、白砂糖25.0 g、纯牛奶40.0 g、玉米油25.0 g、鸡蛋95.0 g、低筋面粉30.0 g、玉米淀粉5.0 g。按此配方生产的粉木耳蛋糕绵软细腻,甜度适宜,具有粉木耳口感清脆弹牙,且感官评分为88.35,各项指标均符合国家标准要求。

Abstract:A new cake product with pink Auricularia cornea flavor was developed to improve the value‐added of pink A.cornea and satisfy consumers’demand for novel baked foods.Single factor tests with the sensory score,specific volume,and texture characteristics as evaluation indicators were conducted to explore the effects of dif‐ferent addition amounts of pink A.cornea,white granulated sugar,milk,and corn oil on the cake.Based on the fuzzy mathematics sensory evaluation method,the formula of pink A. cornea cake was optimized by orthogonal test.The physical and chemical indexes and the microbial indicators of the cake produced with the optimal for‐mula were determined.The results showed that the optimal formula of pink A.cornea cake was as follows:pink A.cornea 10.0 g,white granulated sugar 25.0 g,milk 40.0 g,corn oil 25.0 g,egg 95.0 g,low‐gluten flour 30.0 g,and corn starch 5.0 g.The pink A.cornea cake produced with this formula had a soft and delicate texture,suit‐able sweetness,and the crisp and elastic taste of pink A.cornea,with the sensory score of 88.35.The determina‐tion results were in line with the national standard requirements.
