低糖余甘果果脯加工工艺优化

中文摘要: 为优化低糖余甘果果脯加工工艺,采用单因素试验探究蔗糖添加量、木糖醇添加量、黄原胶添加量和超声波渗糖时间对果脯品质的影响,以感官评分和总糖含量为评价指标,采用Box-Behnken 响应面法对低糖余甘果果脯加工工艺进行优化。结果表明,低糖余甘果果脯加工工艺的最佳工艺条件为蔗糖添加量41%、木糖醇添加量22.50%、黄原胶添加量0.65%、超声波渗糖时间102 min,在此条件下感官评分为92.37,制得的低糖余甘果果脯酸甜适宜,入口回甘,有嚼劲,外形饱满,色泽均匀,呈现较透明的淡黄绿色,表面不黏手,具有余甘果特有风味,其总糖含量为30.77%。
Abstract:The production conditions of low-sugar preserved fruit of Phyllanthus emblica L. were optimized.First,single factor tests were conducted to investigate the effects of sucrose addition,xylitol addition,xanthan gum addition,and ultrasound-assisted sugar permeation time on the quality of the preserved fruit. With the sensory score and total sugar content as evaluation indicators,Box-Benhnken design and response surface methodology were employed to optimize the production conditions of low-sugar preserved fruit of P. emblica. The results showed that the optimal production conditions were sucrose addition of 41%,xylitol addition of 22.50%,xanthan gum addition of 0.65%,and ultrasound-assisted sugar permeation for 102 min. The low-sugar preserved fruit of P. emblica produced under these conditions had the sensory score of 92.37,a sour and sweet taste,a sweet after taste,high chewiness,full appearance,and a uniform transparent light yellow green color. In addition,the preserved fruit had a surface not sticky,a unique flavor,and the total sugar content of 30.77%.
