中文摘要: 鸡骨液酶解是鸡精生产中的关键步骤之一,为探究不同蛋白酶对鸡骨液的酶解效果,借助神经网络建立模型、交互验证、遗传算法优化确定鸡骨液酶解最佳工艺。试验结果表明:复合风味蛋白酶Flavourzyme 和中性蛋白酶Neutrase 的组合对鸡骨液具有最佳的酶解效果,且当两种酶以质量比2.0∶1 复配时酶解效果最佳,最佳酶解条件为水解温度53.0 ℃、pH6.1、水解时间5 h。在该条件下水解度为43.44%,获得的酶解产物无苦味及腥味,具有突出的鲜味和肉香味,呈味效果良好。

Abstract:The enzymatic hydrolysis of chicken bone liquid is one of the key steps in the production of chicken essence. To explore the enzymatic hydrolysis effects of different proteases on chicken bone liquid,this paper determined the optimal enzymatic hydrolysis process for chicken bone liquid through a model established using neural network,cross-validation,and genetic algorithm optimization. The experimental results showed that the combination of the complex flavor protease Flavourzyme and the neutral protease Neutrase had the best enzymatic hydrolysis effect on the chicken bone liquid. The best enzymatic hydrolysis effect was achieved when the two enzymes were mixed in a ratio of 2.0∶1,under the conditions of a hydrolysis temperature of 53.0 ℃,a pH value of 6.1,and a hydrolysis time of 5 hours. Under these conditions,the degree of hydrolysis was 43.44%,and the obtained hydrolysate possessed a prominent umami and meaty flavor without any bitterness and offflavor.
