中文摘要: 为提高鼓槌石斛花的产业化干燥加工品质和效率,该文比较阴干、热风干燥、真空干燥以及真空冷冻干燥对鼓槌石斛花的感官品质、理化指标、化学成分和抗氧化活性等方面的影响,筛选合适的干燥方式。结果表明:阴干处理耗时较长且处理后的鼓槌石斛花不易储存,但蛋白质、氨基酸、多酚和总黄酮含量保留率最高;真空干燥处理的鼓槌石斛花综合成分保留率较低,并且抗氧化能力较弱;热风干燥和真空冷冻干燥处理的鼓槌石斛花综合成分保留率较高,并且抗氧化能力较强,真空冷冻干燥处理的鼓槌石斛花外观最接近新鲜的鼓槌石斛花。综上,热风干燥和真空冷冻干燥是较优的干燥方式,在实际生产过程中,可根据鼓槌石斛鲜花产量与不同的需求目的选择不同的干燥方式。
Abstract:To improve the industrial drying quality and efficiency of Dendrobium chrysotoxum flowers and to select an appropriate drying method,this study compared the effects of drying in the shade,hot air drying,vacuum drying,and vacuum freeze drying on the sensory quality,physicochemical indicators,chemical composition,and antioxidant activity of D. chrysotoxum flowers. The results showed that it took a long time for D. chrysotoxum flowers to dry in the shade. Flowers treated this way were not easy to store,but they had the highest retention rates of protein,amino acids,polyphenols,and total flavonoids. The vacuum-dried D. chrysotoxum flowers had a lower overall component retention rate and weaker antioxidant activity. The hot air drying and vacuum freeze drying methods resulted in higher overall component retention rates and stronger antioxidant activities,with the appearance of vacuum freeze-dried D. chrysotoxum flowers being closest to that of fresh ones. In summary,hot air drying and vacuum freeze drying are the preferred drying methods. In practical production,different drying methods can be selected based on the yield of fresh D. chrysotoxum flowers and different intended purposes.
