中文摘要: 该文研究不同添加量菠萝蜜籽粉(0%、5%、10%、15%、20%)复配面团体系中淀粉的粒径分布、溶解度、溶胀力、凝胶特性、碘结合力、糊化特性、热特性及长程、短程有序性。结果表明,与未添加菠萝蜜籽粉小麦面团相比,复配面团体系中淀粉的起始糊化温度、峰值糊化温度与热稳定性有所提高;淀粉的结晶度降低;面团体系中直链淀粉数量增多。此外,混合淀粉相互作用形成新的凝胶结构,凝胶硬度由226.741 g 增加至314.451 g;糊化后混合淀粉的衰减值与回生值降低。
Abstract:The starch of the dough system compounded with different additions of jackfruit seed flour (0%,5%,10%,15% and 20%) was studied in terms of particle size distribution,solubility,swelling degree,gel properties,iodine binding capacity,pasting properties,thermal properties,long-range and short-range order in this paper. The results showed that compared with the wheat dough without jackfruit seed meal,the starch in the dough system had increases in initial pasting temperature,peak pasting temperature and thermal stability and a decrease in crystallinity. The amount of straight chain starch in the dough system increased with increasing addition of jackfruit seed flour. Moreover,a new gel structure was formed by the interaction of the blended starch,with a hardness of 314.451 g increasing from 226.741 g. The attenuation and retrogradation values of the blended starch decreased after pasting.
