中文摘要: 利用4 种多酚(阿魏酸、没食子酸、茶多酚、儿茶素)与板栗淀粉制备板栗淀粉-多酚复合物,探究复合物晶体结构、微观结构、消化性能的变化规律。结果显示,板栗淀粉-多酚复合物凝胶的微观结构呈现疏松多孔的结构,且阿魏酸/儿茶素的微观多孔结构效果更为明显。分子量更小的阿魏酸/没食子酸更易于与淀粉形成单螺旋结构,复合物表面短程有序程度增加;多酚抑制板栗淀粉分子链的聚集和取向排列,降低长程有序结构形成(相对结晶度:淀粉-阿魏酸复合物11.68%,淀粉-没食子酸复合物12.08%,淀粉-茶多酚复合物10.98%,淀粉-儿茶素复合物10.70%),降低淀粉重结晶能力,减缓淀粉的回生行为。同时在体外消化过程中,茶多酚/儿茶素复合后的板栗淀粉的抗性淀粉(resistant starch,RS)含量增加,抗消化性能效果更显著(RS 含量:淀粉-阿魏酸复合物31.69%,淀粉-没食子酸复合物32.65%,淀粉-茶多酚复合物34.72%,淀粉-儿茶素复合物36.44%)。综上,多酚可有效改善板栗淀粉凝胶制品质地和持水性,提高板栗淀粉的抗回生和抗消化性能。
Abstract:Chestnut starch-polyphenol complexes were prepared with four polyphenols (ferulic acid,gallic acid,tea polyphenols,and catechin) and chestnut starch. The crystal structure,microstructure,and digestive properties were compared among the complexes. The results showed that the chestnut starch-polyphenol complex gels had loose and porous microstructures,which were more obvious in the complexes prepared with ferulic acid/catechin. Ferulic acid/gallic acid with a smaller molecular weight was easier to form a single-helix structure with starch,which improved the short-range order degree on the complex surface. Polyphenols inhibited the aggregation and orientation of chestnut starch molecular chains and reduced the formation of longrange order (relative crystallinity:starch-ferulic acid complex 11.68%,starch-gallic acid complex 12.08%,starch-tea polyphenol complex 10.98%,and starch-catechin complex 10.70%),thereby reducing the recrystallization and slowing down the retrogradation of starch. During in vitro digestion,the content of resistant starch(RS) of chestnut starch increased after complexing with tea polyphenols/catechin,which enhanced the antidigestive properties (RS content:starch-ferulic acid complex 31.69%,starch-gallic acid complex 32.65%,starch-tea polyphenol complex 34.72%,and starch-catechin complex 36.44%). In conclusion,polyphenols can effectively improve the texture and water-holding properties of chestnut starch gel products and enhance the anti-retrogradation and anti-digestive properties of chestnut starch.
