抗菌肽复合保鲜抑制剂对秘鲁鱿鱼生物胺的控制及品质的影响

中文摘要: 为探究抗菌肽复合保鲜抑制剂对秘鲁鱿鱼加工过程中生物胺的抑制效果,评价其对秘鲁鱿鱼加工过程中品质的影响,该研究选取牡蛎源抗菌肽(oyster antimicrobial peptide,OAP)、海蟹源抗菌肽(crab antimicrobial peptide,CAP)和带鱼源抗菌肽(hairtail antimicrobial peptide,HAP)进行单因素试验,分析3 种水产蛋白抗菌肽对生物胺的抑制效果;通过正交优化试验调配出复合保鲜抑制剂的最佳浓度比;验证试验以挥发性盐基氮(total volatile basic nitrogen,TVB-N)值、菌落总数及多种生物胺含量为指标,评价其对秘鲁鱿鱼品质的影响。试验结果表明,3 种水产蛋白抗菌肽均能有效抑制生物胺的生成。正交优化试验得到复合保鲜抑制剂的最佳浓度比为2∶3∶1,其对组胺的抑制率为74.39%。应用该复合保鲜抑制剂后,试验组生物胺含量均低于对照组,证明复合保鲜抑制剂可有效抑制生物胺的生成;第10天时试验组TVB-N 值为17.87 mg/100 g,仅为对照组的47.85%,证明复合保鲜抑制剂对样品中TVB-N 产生明显的抑制作用;第10 天时复合保鲜抑制剂对菌落总数的抑制率达到33.02%。研究结果表明,抗菌肽复合保鲜抑制剂对生物胺的生成有抑制作用,有利于鱿鱼的品质控制。
Abstract:The effect of antimicrobial peptide composite preservative on the production of biogenic amines during the processing of Dosidicus gigas was examined.The inhibitory effects of oyster antimicrobial peptide(OAP),crab antimicrobial peptide(CAP),and hairtail antimicrobial peptide(HAP)on biogenic amines were analyzed by single factor tests.The optimal concentration ratio of the three antimicrobial peptides in the composite preservative was determined by orthogonal design.With total volatile basic nitrogen (TVB-N),total number of colonies,and content of biogenic amines as indicators,the effect of the composite preservative on the quality of processed D.gigas was evaluated.The results showed that the three antimicrobial peptides inhibited the production of biogenic amines.The optimal concentration ratio was determined as 2∶3∶1 for the composite preservative,which inhibited histamine by 74.39%.After the application of this composite preservative,the biogenic amine content of the test group was lower than that of the control group,which proved that this composite preservative could effectively inhibit the production of biogenic amines.On day 10,the group with application of the composite preservative showed the TVB-N of 17.87 mg/100 g,which was only 47.85% of that of the control group,proving that the composite preservative had a significant inhibitory effect on TVB-N in the samples.The composite preservative inhibited 33.02% of the total number of colonies on day 10.The results demonstrated that antimicrobial peptide composite preservative inhibited the production of biogenic amines and facilitated the quality control during the processing of D.gigas.
