中文摘要: 河鲀肉质细嫩,富含多种营养成分,加工利用价值极高。但是,目前国内河鲀加工利用水平仍处于起步阶段,产品附加值低。伴随养殖量的不断扩大以及加工量的日益提高,大量加工副产物资源被堆积填埋,是目前河鲀产业亟待解决的瓶颈问题。为促进河鲀加工利用技术的研究,该文系统总结河鲀养殖产业的发展现状,探讨河鲀鱼的营养价值,介绍国内外河鲀鱼的加工技术,同时分析河鲀加工下脚料(鱼皮、鱼肝和精巢)的综合加工与高值化开发利用现状,旨在为提升河鲀的利用价值提供参考。
Abstract:Puffer fish has tender meat,diverse nutrients,and high processing and utilization value.However,the processing and utilization level of puffer fish in China is still in its infancy,and the added value of the products is low.With the continuous expansion of the breeding scale and the increasing processing volume,massive processing by-products are accumulated and landfilled,which is the bottleneck problem that needs to be solved urgently in the puffer fish industry.To facilitate the research on the processing and utilization technologies of puffer fish,this paper systematically summarized the development status of puffer fish breeding industry,discussed the nutritional value of puffer fish,introduced the processing technologies of puffer fish in China and abroad,analyzed the comprehensive processing and current situation of high-value development and utilization of puffer fish leftovers(fish skin,fish liver,and testis),aiming at providing references for improving the utilization value of puffer fish.
