中文摘要: 山药是我国著名的药食同源植物,含有多种活性物质,具有多种生物活性。现代研究表明山药具有免疫调节、抗炎、抗氧化等多种功能性质,其中山药多糖是最主要的活性成分。山药多糖的结构与其生物活性紧密相关,不同的提取方法可得到不同结构的山药多糖。目前,不同提取工艺对山药多糖结构的影响以及山药多糖结构与其生物活性的关系尚不清楚。因此,该文综述山药多糖的提取工艺对山药多糖结构的影响,探讨山药多糖结构与其生物活性的关系,展望山药多糖研究方向,为山药的开发利用提供参考。
Abstract:Chinese yam is a famous medicinal and edible plant which contains a variety of bioactive substances.Modern research has demonstrated that Chinese yam has immunomodulation,anti-inflammation,and anti-oxidation activities.Polysaccharide is the main active component in Chinese yam,the structure of which is closely associated with its bioactivity.Different extraction methods can produce yam polysaccharides of different structures.At present,little is known about the effects of extraction processes on the structure of Chinese yam polysaccharide and the relationship between the polysaccharide and its bioactivity remain unclear.In this paper,the studies about the above problems were reviewed,and the research prospects of Chinese yam polysaccharide were put forward.This review will provide reference for the development and utilization of Chinese yam polysaccharide.
