Abstract:Anthocyanin is a water-soluble natural pigment widely found in flowers，fruits，and the leaves of plants.It is an important compound since plants used it in various parts to produce color.There is a rich variety of plants that produce anthocyanins.Anthocyanins play an important role in many biological and physiological functions in plants，and they also have a potential for application in many industries such as food，medicine，chemical，and cosmetics.The aim of this article was to review the progress of research in recent years globally that were based on the distribution of plant-derived anthocyanin resources and its extraction methods.This review served as a reference for the exploitation and industrial production of anthocyanin resources.
