中文摘要: 花色苷是一类广泛存在于植物的花、果实和叶中的水溶性天然色素,是植物呈现靓丽颜色的重要物质基础,能产生花色苷的植物来源非常丰富。花色苷具有多种生物学活性和生理功能,在食品、医药、化工、美妆等行业均具有潜在广阔的应用前景。该文就近年来国内外在植物源花色苷的资源分布以及花色苷的提取方法的研究进展进行综述,旨在为花色苷资源的开发利用和工业化生产提供参考。

Abstract:Anthocyanin is a water-soluble natural pigment widely found in flowers,fruits,and the leaves of plants.It is an important compound since plants used it in various parts to produce color.There is a rich variety of plants that produce anthocyanins.Anthocyanins play an important role in many biological and physiological functions in plants,and they also have a potential for application in many industries such as food,medicine,chemical,and cosmetics.The aim of this article was to review the progress of research in recent years globally that were based on the distribution of plant-derived anthocyanin resources and its extraction methods.This review served as a reference for the exploitation and industrial production of anthocyanin resources.
