中文摘要: 该文对黄金石斑鱼肌肉蛋白质和脂肪酸成分进行了分析测定。结果显示,黄金石斑鱼肌肉中含水分77.33%、粗蛋白19.56%、粗脂肪1.92%、粗灰分1.13%。黄金石斑鱼肌肉中共检测出16种氨基酸,氨基酸总含量为肌肉的17.89%,其中人体必需氨基酸含量为6.8%;共检测出14种脂肪酸,饱和脂肪酸3种,单不饱和脂肪酸3种,多不饱和脂肪酸8种,含量分别为肌肉的0.252 3%,0.194 37%和0.244 6%。研究表明,黄金石斑鱼肌肉是一种氨基酸、脂肪酸含量丰富,组成均衡的优质蛋白;黄金石斑鱼是一种肉质鲜美、营养丰富的高品质鱼类,具有较高食用和推广养殖价值。

Abstract:In this study,the protein and fatty acid components in Petenia splendida muscle were analyzed.Moisture,crude protein,crude fat,and crude ash contents were 77.33%,19.56%,1.92% and 1.13%,respectively.Sixteen amino acids were detected,and total amino acid content was 17.89%,6.8% of which represented essential amino acids.Fourteen fatty acids were detected,including 3 saturated fatty acids,3 mono-unsaturated fatty acids,and 8 poly-unsaturated fatty acids.Their respective contents were 0.252 3%,0.1943 7% and 0.244 6%.This study revealed that Petenia splendida muscle was a high-quality protein source,rich in amino acids and fatty acids,with a balanced composition.Petenia splendida is a high-quality,nutritionally rich fish with delicious meat,which has high food and breeding value.
