中文摘要: 马铃薯渣是淀粉深加工的副产品,含有丰富的膳食纤维。文献分析法研究有关马铃薯渣膳食纤维的资料,结果发现:关于膳食纤维提取、改性及物化特性研究较多,相比豆渣、麦麸、玉米麸皮等谷物,马铃薯渣膳食纤维中可溶性成分较多、纤维结构好、应用价值高。参考国内外近10年来的最新研究成果,该文综述马铃薯渣膳食纤维的制备工艺、改性研究、化学组成、理化特性、生理活性和应用价值,指出目前行业发展存在的问题,对加强其深入研究和综合开发有一定的参考价值。
Abstract:Potato residue is a by-product of deep processing of starch and rich in dietary fiber.The research datas on dietary fiber from potato dregs were studied by literature analysis,the results showed that there were many studies on the extraction,modification and physic-chemical properties of dietary fiber,which were more soluble,better fiber structure and higher application value compared with soybean dregs,wheat bran,corn bran and other cereals.Based on the latest research results of home and abroad in recent 10 years,the preparation process,the physic-chemical characteristics,the biological active functions,and application of potato residue dietary fiber were summarized,and the problems existing in the current industry development were pointed out.This information might lead to a reference value in depth study,the comprehensive development and application of the potato residue dietary fiber.
