中文摘要: 免疫调节是指机体依靠免疫系统识别和清除抗原性物质,维持身体的生理平衡与相对稳定的过程。随着生活方式的改变,大多数人都出现过因为免疫调节紊乱而产生的不良症状。因此,利用食品中的免疫调节物质调节人体的免疫系统成为一项重要的研究内容。在我国保健食品可以申报的18项功能中,有助于增强免疫力也成为了最受关注的功能之一。该文就食品中的免疫调节物质及其免疫调节机制的研究进展进行综述,对现有的具有免疫调节功能的食品进行介绍,以期为进一步开发利用免疫调节物质,研发具有增强免疫力的功能食品提供理论依据。
Abstract:Immune regulation refers to the process by which the body relies on the immune system to recognize and remove antigenic substances and maintain the body's physiological balance and relative stability.With changes in lifestyle,most people have experienced adverse symptoms due to immune regulation disorders.Therefore,the use of immunomodulatory substances in food to regulate the body's immune system has become a focus of research.Among the 18 functions that can be declared in health food in China,the immune regulation function has become one of the most concerning.This article reviews the research progress of active substances with immunomodulatory functions in food and their immunomodulatory mechanisms,while introducing the existing foods with immunomodulatory functions.This article aims to provide a theoretical basis for the further development and utilization of immunomodulatory substances and the development of foods with immunomodulatory functions.
