中文摘要: 该文以贵州麻江3个不同产地蓝莓蜜为研究对象,采用国标方法测定氨基酸、维生素和矿物质含量,研究其营养价值。结果显示3个产地蓝莓蜜样品中均检测到14种氨基酸、5种维生素和5种矿物质。蓝莓蜜中氨基酸含量为146.70 mg/100 g~167.00 mg/100 g,以苯丙氨酸、谷氨酸和天冬氨酸为主,其中药效氨基酸占比70.98%~73.58%;仅检测到一种脂溶性维生素(β-胡萝卜素)和4种水溶性维生素(烟酸、叶酸、泛酸和生物素);矿物质含量具有高钾低钠特征,钾钠比为16.99~32.37,3个产地蓝莓蜜均检出微量元素铜和锰,乌卡坪产地还检出铁元素。综上,贵州麻江蓝莓蜜富含氨基酸、维生素和矿物质,展现出贵州麻江地区鲜明的地域特色,为进一步研究蓝莓蜜的药理学活性提供了数据支持。
Abstract:The purpose of this study was to investigate the nutritional value of blueberry honey from three different producing areas of Majiang County,Guizhou province.The components and nutrient,amino acid,vitamin and mineral contents in blueberry honey were determined according to relevant national standard methods.The results showed that 14 amino acids,five vitamins and five minerals were determined in blueberry honey samples.The amino acid content ranged from 146.70 mg/100 g to 167.00 mg/100 g,and phenylalanine,glutamateand aspartic acid were the main amino acids determined.The pharmacodynamic amino acid accounted for 70.98% to 73.58% of the total amino acid content.One fat-soluble vitamin and four water-soluble vitamins(nicotinic acid,folic acid,pantothenic acid,and biotin)were determined.The mineral content was characterized by high potassium and low sodium concentrations,and theratio of potassium to sodium was 16.99-32.37.The trace elements copper and manganese were determined in the honey from the three producing areas,whereas ironwas also determined in the honey from the Wukaping producing area.In conclusion,blueberry honey from Guizhou Majiang is rich in nutrients,amino acids,vitamins and minerals,characteristics of the honey from that region.These results provided the basis for further research on the pharmacological activity of blueberry honey.
