中文摘要: 纳米酶作为一种酶模拟物具有成本低,稳定性好,灵敏度高等优势,可代替传统酶构建纳米酶生物传感器,操作的简便性使其成为传统检测方法的良好补充工具。该文首先简述纳米酶生物传感器的检测原理,其次概述近年来纳米酶在食品质量与安全检测中的应用实例,最后对其在该领域的应用进行总结与展望。

Abstract:Nanozymes,as enzyme simulators,offer the advantages of low cost,good stability,and high sensitivity and can replace traditional enzymes for the development of a nanozyme-based biosensor.The simplicity of the procedure makes it a good complementary tool to the traditional detection methods.In this study,the detection principle of a nanozyme biosensor has been briefly introduced.Subsequently,examples of the applications of nanozymes in the analysis of food quality and safety in recent years have been summarized.Finally,future prospects of nanozymes applied in the analysis of food quality and safety have been delineated.
