中文摘要: 以不同等级的武夷肉桂为研究材料,测定其6种品质指标,计算酚氨比,并结合审评得分综合分析。结果表明,高等级肉桂,品质指标含量高,其中茶多酚在3个等级之间存在显著差异,儿茶素在一等和三等之间存在显著差异,一等和二等的可溶性糖均与三等之间差异显著。线性分析发现等级和6种品质指标均呈正相关,与茶多酚的R2达0.64。相关性分析表明,除咖啡碱外,其余指标均与审评得分呈极显著正相关,其余指标大多也呈两两显著或极显著正相关。综上,茶多酚、儿茶素、可溶性糖含量可作为武夷肉桂代表性的品质指标,尤其是茶多酚含量最具代表性。
Abstract:Wuyi Rougui tea with different grades were used as the research materials,and contents of six quality indexes and phenol-ammonra ratio was calculated.Results showed that Rougui with high grade contained the high contents of quality indexes.For tea polyphenol,there were significant differences between the three grade.Catechin content exist significant differences between the first grade and third grade.There were significant differences in soluble sugar content between the first and the third grade,the second and the third grade.Linear analysis found that grades were positively correlated with six quality indexes,among which R2of tea polyphenols reached 0.64.The correlation analysis showed that except for caffeine,the other indexes were significantly positively correlated with the evaluation score(grade),most of which showed significant or extremely significant positive correlation.In brief,contents of tea polyphenols,catechins and soluble sugar can be used as the representative quality indexes of Wuyi Rougui tea,especially the content of tea polyphenols was the most representative.
