中文摘要: 以微波震碎的物理场对枸杞中β-胡萝卜素进行高效提取,使其充分游离于枸杞浆液中。以β-胡萝卜素含量为指标,以微波处理时间、微波输出功率和微波处理次数为主要考察因素,对枸杞中的β-胡萝卜素富集最佳工艺参数进行分析优化。正交试验结果得出,β-胡萝卜素富集最佳工艺为微波处理时间50 s、微波输出功率350 W、微波处理5次,并利用包埋技术将β-胡萝卜素富集最佳工艺所得枸杞浆制成β-胡萝卜素微胶囊并添加在鸡尾酒奶茶中,得到的产品中β-胡萝卜素含量为17.95 mg/kg,进而制作一款富含β-胡萝卜素的鸡尾酒奶茶产品。
Abstract:The physical field of microwave shattering was used to extract β-carotene from Chinese wolfberry and made it fully free in the wolfberry slurry.Taking the content of β-carotene as the index,microwave processing time,microwave output power and microwave treatment times as the main factors,the optimum process parameters of β-carotene enrichment in Chinese wolfberry were analyzed and optimized.The results of orthogonal test showed that the best enrichment process of β-carotene was microwave treatment time 50 s,microwave output power 350 W and microwave treatment times 5 times.The best process of β-carotene enrichment of Chinese wolfberry pulp by embedding technology was made into β-carotene microcapsules and added into cocktail milk tea.The content of β-carotene in the obtained product was 17.95 mg/kg,and a cocktail milk tea product rich in β-carotene was prepared.
