Abstract:Water chestnuts are characteristics agricultural products in China，which have a large output，but the shelf life is short，and the types of products on the market are single，which can′t meet market demand.The resource development and utilization of water chestnut in the past ten years，included the storage and preservation，the processing technology of juice and various drinking products，the application methods of waste and other new application directions，and the preservation and comprehensive utilization of water chestnuts were intrduced systematically.Prospects were proposed in order to provide a theoretical basis for the further development and utilization of water chestnut resources.
